- Top the chicken mixture with a final layer of potato, forming a sandwich of chicken inside two layers of potato.
- Unmold or remove the cylinder.
- Garnish with lettuce and mayonnaise.
- Cut the hard boiled eggs in discs and place on top. Add black olives, if desired.
- This dish can be served slightly cold.

With avocado: Layer thin slices of ripe avocado between the chicken filling and the top potato layer for creaminess and mild richness that complements the mild chicken.

What if I don’t have a molding cylinder?
A deep bowl or small loaf pan lined with plastic wrap works equally well. Invert the bowl onto a plate, peel away the wrap, and the shape will hold.
Can I make the chicken filling without mayonnaise?
